Fiber delays your stomach's effort to get at the sugar, carbs and starches in carbohydrates i.e. high fiber food has the effect of slowing the speed with which your stomach digests what you've eaten. The dietary fiber in vegetables like broccoli is cellulose, which is in essence wood.  The nutrients are bound up in dietary fiber so, the stomach has to work harder to get at the nutrition. 

The faster the sugar and carbs you eat are processed and absorbed into your bloodstream, the fatter you get.  Anything that speeds up the process of digestion is bad for your weight loss diet and anything that slows it down is good.

Fiber is not the only thing that slows the digestion of carbohydrates.  High fiber food, together with fats, proteins and acidity delays the absorption of sugars and starches.  Eating a little protein, or some fat - good fat, of course - along with good carbs with high fiber is beneficial.  Acidic foods such as lemon and vinegar slow the speed with which your stomach empties, therefore cutting back on the rise in blood sugar. Salads or vegetables dressing in both lemon and vinegar is good and you'll enjoy the benefits.

As for bread, the coarser the bread, the higher the fiber, the better it is for you. Wholemeal bread is better than white bread because it has a lower glycemic index.  If we eat white bread, we're getting no fiber with our carbs. That's like drinking on an empty stomach.  Our stomach can get at the starches without having to first separate them from the fiber.  As a result, the bread is quickly turned into glucose - blood sugar; and cause an equally sharp rise in insulin, thereby creating more cravings for food later on.

Freshly-squeezed fruit juices is better than ready-made juices because of the fibrous pulp and the superior nutrients.  The skin of an apple is quite healthy - the pectin is a good fiber that accompanies the fructose into your system.  So eating an apple a day is still recommended for well-being but drinking its juice is not.  Leave vegetables and fruit unpeeled where possible, for maximum fiber rich food content.

Fiber is part of the grain not absorbed into bloodstream from the intestine but excreted as waste.  High fiber rich food helps your colon to function efficiently, hence prevents constipation.  Food high in fiber is also important in helping to control the blood glucose level and regulating bowel function.
