Phase 1 SouthBeach Breakfast Recipe

Vegetable Quiche Recipe
(Serves 6)

SouthBeach Recipe Food Ingredients:

300g frozen chopped spinach
3 eggs
100g grated reduced-fat cheese
50g finely chopped green peppers
50g finely chopped onions
3 drops Tabasco sauce (optional)

 

SouthBeach Recipe Cooking Method:

Microwave the spinach for 2 1/2 minutes on high.  Drain excess liquid.

Line 12 muffin tins with baking cases.

Combine the eggs, cheese, peppers, onions and Tabasco sauce if using, in a bowl.  Mix well. Divide evenly among the muffin cases.  Bake at 180 deg C. for 20 minutes until a knife inserted in the centre comes out clean.
