Phase 1 SouthBeach Dinner Recipe

 

Stewed Tomatoes and Onions
(Serves 6)

SouthBeach Recipe Food Ingredients:

Lite cooking spray
60g chopped green pepper
30g thinly sliced celery
1 small onion, chopped
1 clove garlic, finely chopped
700g peeled chopped tomatoes
1 tablespoon red wine vinegar
1/8 teaspoon freshly ground black pepper

 

SouthBeach Recipe Cooking Method:

Coat a large non-stick frying pan with cooking spray.  Place over medium-high heat until hot.  Add the pepper, celery, onion and garlic.  Sauté for 5 minutes or until the vegetables are tender.  Add the tomatoes and the remaining ingredients.  Bring to a boil.  Cover, reduce heat and let simmer for 15 minutes, stirring occasionally.
