Phase 1 SouthBeach Diet Recipe for Lunch

 

Gazpacho Recipe
(Serves 5)

SouthBeach Recipe Food Ingredients:

600ml tomato or vegetable juice
225g peeled, seeded, finely chopped fresh tomatoes
110g finely chopped celery
110g finely chopped cucumber
110g finely chopped green pepper
110g finely chopped spring onions
3 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1 large clove garlic, finely chopped
2 teaspoons finely chopped fresh flat -leaf parsley
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/2 teaspoon fresh ground black pepper

SouthBeach Recipe Cooking Method:

Combine the juice, tomatoes, celery, cucumber, pepper, onions, vinegar, oil, garlic, parsley, salt, Worcestershire sauce and black pepper in a large glass or stainless-steel bowl.  Cover and refrigerate overnight.  Serve cold.
