Phase 1 SouthBeach Breakfast Recipe

 

Cheesy Frittata Recipe
(Serves 2)

 

SouthBeach Recipe Food Ingredients:

Lite cooking spray
2 Teaspoons healthy butter-substitute spread
50g sliced onion
50g sliced red pepper
50g sliced courgette
2 small plum tomatoes, sliced
1 tablespoon chopped fresh basil
Pinch freshly ground black pepper
2 eggs
100g virtually fat-free cottage cheese
50 ml fat-free evaporated milk
20g grated reduced-fat Cheddar cheese

 

SouthBeach Recipe Cooking Method:

Coat an ovenproof 30 cm frying pan with cooking spray and place over medium-low heat until hot.  In the frying pan, melt the spread.  

Add the onion, red pepper and courgette and sauté until the vegetables are lightly brown.  

Add the tomatoes, basil and black pepper and stir to combine.  Cook until the flavors are blended  and remove from heat.

Preheat the grill.  In a blender, combine the eggs, cottage cheese and milk and process until smooth.

Pour the egg mixture over the vegetables.  Cover and cook on medium-low heat until the bottom is set and the top is still slightly wet. 

Transfer the pan to the grill and grill until the top is set.  Sprinkle with the cheese and grill until the cheese melts.
